Moroccan Carrot Salad

Very refreshing and light salad. Definitely feels like spring πŸ˜‰

(Serves 3-4) Ingredients: 5 carrots, shredded into matchsticks strips 2 garlic cloves, minced 2-3 tablespoon chopped parsley 4 tablespoon olive oil 1 teaspoon paprika 1 teaspoon cumin 1 teaspoon cayenne pepper Salt, pepper to taste

Method: In a mixing bowl combine all ingredients, toss well. Refrigerate at least for 2 hours before serving. Recipe adapted from epicurious.com
