Crunchy Coconut Granola
I have to admit I am not a breakfast person, although I try to have one every day. It seems there is no time for me to actually to sit down and enjoy first meal of a day. By the time A. is fed, dressed and entertained, it’s almost noon.
There is only one thing I *must* have in the mornings and that’s my big mug of coffee. Coffee makes me sane : )
When I do have breakfast I like to have something simple and quick yet delicious and satisfying. And granola ticks all boxes. And what I like the most about granola that if stored in an airtight container in a fridge, it will last for several months. But in our house it rarely lasts for more than a week…

(Makes 15 servings)
2 tablespoons sunflower oil
60 ml honey
300 rolled oats
3 tablespoons sesame seeds
100 grams flaked almonds
150 ml orange juice
100 grams raisins
60 grams coconut flakes
Preheat oven to 150⁰C. In a bowl mix first five ingredients then pour in orange juice and mix well.
Evenly spread granola onto baking sheet. Bake for 15 minutes then add raisins and coconut flakes and continue to bake for another 10 minutes.
Cool completely before transferring to an airtight container.
